Meatballs with mint, lemon and courgette flowers.
Recipe for around 12 meatballs


  • 2 slices of homemade bread
  • 300 grams of minced pork
  • 300 millilitres of milk (250 of which are for the sauce)
  • 1 egg
  • 100 grams of Parmigiano Reggiano Parmesan cheese (20 of which are for the sauce)
  • 40 grams of Fontina cheese
  • 50 grams of butter
  • 12 mint leaves
  • 2 courgette flowers
  • The grated peel of 2 lemons and their juice
  • 50 grams of flour
  • 200 grams of SfornArte Pane Grattugiato No-OGM (Non-GMO breadcrumbs)
  • 200 grams of Sfornarte Panatura Saporita (Flavoured breadcrumbs)
  • Sunflower oil for frying (1 litre)

Exquisite meatballs with mint and lemon scent. The recipe is simple and the taste is exceptional!
The crunchiness of courgette flowers combined with the freshness of mint and lemon.

Wash and clean the courgette flowers and dry them well. Then spread out their leaves to obtain the optimal level of crunchiness when you fry them in hot oil, until they are crispy and golden.

Cut the slices of bread into small pieces and leave them to soften in a bowl of milk for about 10 minutes.
In the same bowl, mix the minced meat, Parmesan cheese, chopped mint leaves, juice and grated peel of the lemons, an egg yolk, with salt and pepper to taste. Mix everything well with your hands. If the result is too soft, add SfornArte Pane Grattugiato No-OGM, until you get a soft but firm loaf of meaty dough.

Now make it into balls, each one about the size of a walnut, perhaps by using an ice cream scooper spoon. Heat up the sunflower oil in a frying pan. In the meantime, give the meatballs a coating of flour, then coat them with the egg white and give them a generous coating of SfornArte Panatura Saporita. Fry them in the pan of hot oil, turning them over a few times until they are a uniform golden brown colour. Finally make the parmesan sauce to accompany your delicious meatballs!
